Kefir is a great ingredient to add to your diet, as it has many health benefits. Enjoy the fluffiness of these delicious pancakes and have a great start to your day.
Ingredients
- 300 g Kefir
- 150 g flour
- 1 egg
- 45 g sugar (3 tbsp)
- 20 g melted butter (1 tbsp)
- 1/2 tsp baking powder
- 1 tsp vanilla (extract/essence or vanilla sugar)
- *Extra butter to add in the pan (approx. 2 tbsp)
Instructions
- Mix in a bowl the egg, sugar and the vanilla extract (or vanilla sugar) using a hand mixer or a whisk.
- Add the Kefir and melted butter and keep mixing. Add then the flour and baking powder and mix one more time until you get a smooth batter.
- Melt some of the extra butter in a pan on a low temperature. Once the butter is melted, add some of the pancake batter ( I use a ladle for this). Cook the pancake until you see the first bubbles (after 1 minute approx.) then flip it with the help of a spatula. Cook it for approx. 3-4 minutes in total, flipping it 3 or 4 times if necessary. The pancake should have a nice golden colour on both sides. Repeat the process until you use all the batter. You should get between 8-10 pancakes.
- Serve them immediately with the topping of your choice: fresh fruits, maple syrup, icing sugar, whipped cream, etc.
*To keep your pancakes warm while you cook the rest, turn on your oven to the minimum temperature (50°C approx.). Put the pancakes in the oven until you are ready to serve them.
